Orange Marmalade Chicken and Sweet Potatoes

Last week we asked how you liked the recipes in our 30 Day Slow Cooker challenge so far. We’ve gotten some awesome feedback including a request for some recipes that use chicken and something that didn’t seem so fall like. I think this recipe fits the bill perfectly.

The orange marmalade chicken calls for chicken thighs. We like to use the boneless, skinless kind in this recipe for an easy meal. Chicken thighs are also still fairly inexpensive to buy. Of course if you prefer chicken breast, or chicken tenders happen to be on sale this week at your grocery store, feel free to substitute those.

Orange Marmalade Chicken and Sweet Potatoes

Ingredients

  • 4 sweet potatoes, cleaned and coarse cut
  • 6 chicken thighs, skin off
  • 1 cup orange marmalade
  • 1/2 cup chicken broth
  • salt and pepper to taste

Instructions

  1. Put prepared sweet potatoes in crockpot, add salt and pepper to taste.
  2. Arrange chicken thighs on top of sweet potatoes, sprinkle with salt and pepper.
  3. Mix orange marmalade and chicken broth together in separate bowl, then pour over the chicken.
  4. Set crockpot to LOW and cook covered for 6 to 8 hours.
  5. Spoon sauce over top of chicken when serving. Serve alongside steamed kale for a complete meal.
