Slow Cooker Mushroom Beef Stroganoff

A few days ago we shared a recipe for a creamy mushroom beef dinner. It was a huge hit all around so we thought we’d share our mushroom beef stroganoff recipe with you as well.

This is always a family favorite (we’ve been saying that a lot, haven’t we? ) but it’s always in the meal rotation making it a great choice for a week day meal.

Plan for it on a day when you know you’ll be busy. If there’s a lot of errands to run, or you’re working all week, start this up in your slow cooker in the morning. When you get home, get some water boiling, throw in some noodles and let them cook while you set the table.

Grab some bagged lettuce or some baby carrots, ranch dressing and dinner is done. Serve the mushroom beef stroganoff over the hot noodles along with your salad, carrots or whatever else your family enjoys with this type of meal.

Beef Stroganoff with Mushrooms

Beef Stroganoff with Mushrooms

  • 1 lb beef stew meat
  • 1 can (10 oz) golden cream of mushroom soup
  • 1 can (4 oz) sliced mushrooms
  • 1 cup water
  • 1/2 tsp onion flakes
  • salt and pepper to taste
  • 6 cups hot cooked wide egg noodles

  1. In crockpot mix together meat, soup, mushrooms, water, and onion flakes.
  2. Set crockpot to LOW heat, cover and cook for 6 to 8 hours or until meat is tender.
  3. Serve over hot cooked noodles.

We don’t often have leftovers when we fix this, but it’s just as delicious warmed up the next day. I mix whatever noodles and stroganoff are leftover, stick them in a plastic container and store them in the fridge.

Or you can make what we call “Intentional Leftovers”.  If you have a large slow cooker you can double the batch and freeze half of it for another meal to have on hand.
