Even if you’re not a fan of sweet fruit in  your main dishes, give this one a try. The sweetness of the peaches creates a perfect balance with the tartness of the tomatoes and the spiciness of the cayenne pepper. The end result is one of the most delicious pork dishes you’ve ever tasted. Very different take on your regular pork chops. We serve this over rice. It doesn’t really need a side dish, but a small salad or some sliced cucumbers go really well with it.

Spicy Peach Chops Cooked In The Slow Cooker

Ingredients

  • 1 tbsp of canola oil
  • 4 bone in center cut pork chops
  • 1 (15 oz.) can sliced peaches
  • 1 (15 oz.) can tomato sauce
  • 1 C of water
  • 2 tsp of soy sauce
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp dried basil
  • 1/8 tsp cayenne pepper

Instructions

  1. Place the canola oil into a skillet placed over medium high heat. Add the pork chops. Brown the chops, turning once, for 6 minutes. Drain on paper towel then place in the crock pot.
  2. Drain the peaches but reserve the juice. Place the reserved juice into a mixing bowl. Add the tomato sauce, water and soy sauce and stir until blended together. Add the rosemary, thyme, basil and cayenne pepper and stir until blended in. Pour the mixture over the top of the pork chops.
  3. Lay the peaches evenly over the top. Cover the crock pot and cook on low for 7 hours or until the chops are tender and cooked through.
  4. Makes 4 servings
